“One of the secrets of cooking is to learn to correct something if you can, and bear with it if you cannot.”


  • 1lb ground beef
  • 1 small white onion; chopped
  • 1 can of black beans
  • 2 gloves of garlic, minced
  • 1 packet of taco seasoning
  • 8 uncooked flour tortillas
  • Grated cheese
  • Cherry tomatoes, cut into fourths
  • Avocado
  • Fresh cilantro
  • Sour Cream


  1. Preheat oven to 350 degrees.
  2. Use a bowl (or other round object) to cut a medium sized circle out of each uncooked flour tortilla.
  3. Spray a muffin tray with non-stick cooking spray. Form a cup in each tin with tortilla circles.
  4. In a large skillet cook meat until brown, add onion and garlic.
  5. Strain black beans and add to the meat mixture.
  6. Stir in taco seasoning with water, as needed.
  7. Meanwhile, bake taco cups for 2-4 minutes until crisp.
  8. Sprinkle cheese on the bottom of each cup, then add meat mixture to each cup. Top with more cheese if desired and return to the oven until cheese is melted.
  9. Add avocado, cherry tomatoes, fresh cilantro and sour cream to the top of each cup.
