Ingredients- Chicken Tenders

  • Canola oil cooking spray
  • 3/4 cup whole-wheat breadcrumbs
  • 1/2 cup pecan pieces
  • 2 tablespoons chili powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1 tablespoon water
  • 1 pound skinless chicken breast tenders

Chipotle Ketchup

  • 1 1/2 cup ketchup
  • 2 tablespoons honey
  • 1 tablespoon fresh lime juice
  • 2 cloves of garlic, minced
  • 1 tablespoon chipotle chili powder
  • 1 tablespoon cumin

Baked French Fries

  • 1 large potato
  • Oil mister with olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cheyenne pepper
  • 1/2 teaspoon chili powder
  • 1 teaspoon garlic powder

Preparation- Chicken Tenders

  1. Preheat the oven to 450 degrees. Thoroughly coat a wire rack with cooking spray and set on a foil-lined baking sheet.
  2. Combine breadcrumbs, pecans, chili powder and salt in a blender. Blend until throughly mixed; about 1 minute. Transfer mixture to a bowl.
  3. Whisk egg and water in another bowl.
  4. Dip each chicken tender into the egg mixture followed by the pecan mixture. Shake off any extra crumbs and place each tender on the wire rack.
  5. Bake the chicken tenders until they are no longer pink; about 15 minutes.

Chipotle Ketchup

  1. Mix all ingredients in a blender or food processor.

Baked French Fries

  1. Preheat the oven to 450 degrees.
  2. Cut the potato into strips; place the potato pieces on a cookie sheet coated with cooking spray.
  3. Spray fries with olive oil from the oil mister.
  4. Mix paprika, cheyenne pepper, chili powder and garlic powder in a small bowl; sprinkle spices on to the fries.
  5. Bake for 20 minutes, turning after 10 minutes.
