Feta-Stuffed Pita Burgers

Ingredients

  • 2 tablespoons cornmeal
  • 2 tablespoons milk
  • 1 tablespoon finely chopped onion
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried oregano, crushed
  • 1/8 teaspoon lemon-pepper seasoning
  • 1 pound lean ground beef
  • 1/3 cup finely crumbled feta cheese
  • 1 tablespoon milk
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground red pepper
  • Pita bread rounds
  • Fresh spinach, tomatoes, cucumbers and any other condiments you desire

Preparation

  1. In a medium bowl, combine cornmeal, the 2 tablespoons milk, the onion, garlic, salt, oregano, and lemon-pepper seasoning. Add ground beef; mix well using hands. Shape mixture into eight 1/4-inch-thick patties.IMG_8783
  2. For filling, in a small bowl, combine feta cheese and the 1 tablespoon milk. Divide filling among four of the patties. Top with the remaining patties; press edges to seal.IMG_8784
  3. In a small bowl, combine cumin and cayenne pepper. Sprinkle mixture over patties.
  4. Preheat grill. Reduce heat to medium. Place patties on grill rack over heat. Cover and grill as above and grill for 12 to 16 minutes or until done, flipping once.
  5. To serve, cut pita bread rounds in half crosswise. Serve burgers in pita halves with spinach, tomatoes and cucumbers.

Irish Beef Dinner

This is a great variation on shepherd’s pie!

Ingredients

  • 2 medium white potatoes
  • 2 small parsnips
  • 1 pound lean ground beef
  • 1 medium white onion, chopped
  • 2 cups finely shredded cabbage
  • 2 medium carrots, halved and sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon all-purpose flour
  • 1/4 cup tomato paste
  • 2 cups reduced-sodium beef broth
  • 1/2 cup frozen peas
  • 3/4 teaspoon salt, divided
  • 1/2 teaspoon pepper, divided
  • 1/4 cup whole milk

Preparation

  1. Peel potatoes and parsnips and cut into large pieces; place in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain.
  2. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the cabbage, carrots, thyme and Worcestershire sauce.IMG_9066
  3. In a small bowl, combine the flour, tomato paste and broth until smooth. Gradually stir into meat mixture. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until vegetables are tender. Stir in the peas, 1/4 teaspoon salt and 1/4 teaspoon pepper.
  4. Drain potatoes and parsnips; mash with milk, butter, remaining salt and pepper. Serve with meat mixture.

Stir-Fried Sweet Potatoes and Beef

Ingredients

  • 3 tablespoons vegetable oil
  • 8 ounces beef chuck, flank, or sirloin steak, cut into strips
  • 2 pounds sweet potatoes, peeled and grated, about 4 cups
  • 1/2 cup sliced green onions
  • 1/2 cup diced white onions
  • 1 or 2 fresh jalapeño peppers, seeded and chopped
  • 1 tablespoon minced garlic
  • Salt and black pepper
  • 1⁄4 cup fish sauce
  • Juice of 1 lime
  • 1⁄2 cup chopped fresh cilantro

Preparation

  1. Put a large skillet or wok over high heat for 3 to 4 minutes.
  2. Add 1 tablespoon of the oil and the beef. Stir immediately, then stir every 20 seconds or so until the meat is no longer pink, just a minute or two. Transfer the beef to a plate.
  3.  Reduce the heat to medium-high and add the remaining 2 tablespoons oil. When it’s hot, add the sweet potatoes, scallions, chiles and garlic. Sprinkle with salt and pepper.
  4. Cook, stirring only occasionally, until the potatoes change color and begin to brown; then stir more frequently until they are tender but not at all mushy, 10 to 15 minutes.IMG_8909
  5. Return the beef to the pan along with the fish sauce and lime juice.
  6. Cook, stirring and scraping the bottom of the pan, until the liquid is reduced slightly.
  7. Toss in the herb and serve.

Apple and Cheddar Beef Burgers

Ingredients

  • 1 pound lean ground beef
  • 1/3 cup finely chopped red onion
  • 2 ounces sharp cheddar, shredded
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup shredded peeled Granny Smith apples

Preparation

  1. Combine beef, onion, cheddar, mustard, salt, pepper and apple in a large bowl and form into four (4-inch) patties.
  2. Grill over medium heat or broil, flipping once, until done to your taste, 6 to 8 minutes.

Mini Taco Cups

“One of the secrets of cooking is to learn to correct something if you can, and bear with it if you cannot.”

Ingredients

  • 1lb ground beef
  • 1 small white onion; chopped
  • 1 can of black beans
  • 2 gloves of garlic, minced
  • 1 packet of taco seasoning
  • 8 uncooked flour tortillas
  • Grated cheese
  • Cherry tomatoes, cut into fourths
  • Avocado
  • Fresh cilantro
  • Sour Cream

Preparation

  1. Preheat oven to 350 degrees.
  2. Use a bowl (or other round object) to cut a medium sized circle out of each uncooked flour tortilla.
  3. Spray a muffin tray with non-stick cooking spray. Form a cup in each tin with tortilla circles.
  4. In a large skillet cook meat until brown, add onion and garlic.
  5. Strain black beans and add to the meat mixture.
  6. Stir in taco seasoning with water, as needed.
  7. Meanwhile, bake taco cups for 2-4 minutes until crisp.
  8. Sprinkle cheese on the bottom of each cup, then add meat mixture to each cup. Top with more cheese if desired and return to the oven until cheese is melted.
  9. Add avocado, cherry tomatoes, fresh cilantro and sour cream to the top of each cup.

Mexican Cornbread Casserole

“Be a fearless cook! Try out new ideas and new recipes, but always buy the freshest and finest ingredients, whatever they may be.”

Ingredients

  • 1 pound ground beef
  • 1 (15-ounce) can black beans
  • 1 jar hot salsa
  • 1 box corn bread
  • 1 egg
  • 1 1/3 cups low fat buttermilk
  • 1/4 cup sugar
  • 6 tablespoons melted unsalted butter
  • 1 fresh green chili; diced

Preparation

  1. Preheat oven to 400°F. In a large sauté pan, brown meat. Drain well and return to stove. Add beans and salsa, stir to combine and simmer over medium heat 5 to 7 minutes. 
  2. Let cool slightly then spoon into a 9×12-inch casserole dish.
  3. Prepare cornbread batter according to package directions, using the remaining ingredients above.
  4. Spoon over top of beef mixture. Smooth out to cover. Bake 15 to 20 minutes until cornbread is lightly brown and filling is bubbling.

Beef with Broccoli

“The only real stumbling block is fear of failure. In cooking you’ve got to have a what-the-hell attitude.”

Ingredients

  •  3/4 pound flank or sirloin, sliced thinly across the grain
  • 3/4 pound broccoli florets
  • 2 tablespoons  cooking oil
  • 2 cloves garlic, minced
  • 1 teaspoon cornstarch, dissolved in 1 tablespoon water

Marinade

  • 1 teaspoon soy sauce
  • 1 teaspoon Chinese rice wine (or dry sherry)
  • 1/2 teaspoon cornstarch
  • 1/8 teaspoon freshly ground black pepper

Sauce

  • 2 tablespoons oyster sauce
  • 1 teaspoon dry sherry
  • 1 tablespoon soy sauce
  • 1/4 cup chicken broth

Preparation

  1. Marinate the beef: Stir together the beef marinade ingredients in a medium bowl. Add the beef slices and stir until coated. Let stand for 10 minutes
  2. Prepare the sauce: Stir together the sauce ingredients in a small bowl.
  3. Blanch the broccoli: Cook the broccoli in a small pot of boiling, salted water until tender-crisp, about 2 minutes. Drain thoroughly.
  4. Heat a large frying pan or wok over high heat until a bead of water sizzles and instantly evaporates upon contact. Add the cooking oil and swirl to coat. Add the beef and immediately spread the beef out all over the surface of the wok or pan in a single layer (preferably not touching). Let the beef fry undisturbed for 1 minute. Flip the beef slices over, add the garlic to the pan and fry for an additional 30 seconds to 1 minute until no longer pink, Pour in the sauce, add the blanched broccoli and bring to a boil. Pour in the dissolved cornstarch and cook, stirring, until the sauce boils and thickens, 30 seconds.

Buffalo Style Sliders

“Anybody who doesn’t think that the best hamburger place in the world is in his home town is a sissy.”

Ingredients – 24 Sliders

  • 1/2 cup dried onion flakes
  • 2 pounds ground beef
  • Seasoned salt to taste
  • Fresh pepper to taste
  • 1 large onion, sliced
  • 1 cup button mushrooms, sliced
  • 1 cup blue cheese
  • 1 package of whole wheat miniature hamburger buns

Preparation

  1. Evenly spread the onions on the bottom of a 9×13 inch baking dish. Gently press the ground beef on top of the onion flakes. Press evenly making one giant patty.
  2. Sprinkle with seasoned salt and pepper. Bake in a 400 degree oven for 20 minutes
  3. Meanwhile, sauté sliced onions and mushrooms in olive oil, about 5 minutes
  4. Once the meat is done, use a paper towel to pat the excess grease from the top of the patty.
  5. Using a knife or pizza cutter, cut into 24 small square patties
  6. Place each patty on a bun, add onions, mushrooms and blue cheese to create a buffalo style slider! Add a toothpick to each slider and enjoy!

Mongolian Beef

 “The name of this dish is somewhat misleading, as aside from the beef, none of the ingredients or the preparation methods are drawn from traditional Mongolian cuisine. The term “Mongolian” is rather meant to imply an “exotic” type of food.”

Ingredients – Serves 4

  • 2 tablespoons soy sauce
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • 2 teaspoons dry sherry
  • 2 teaspoons hoisin sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon chile paste with garlic
  • 1/4 teaspoon salt
  • 2 teaspoons peanut oil
  • 1 tablespoon minced peeled fresh ginger
  • 1 tablespoon minced fresh garlic
  • 1 pound sirloin steak, thinly sliced across the grain
  • 16 medium green onions, cut into 2-inch pieces

Preparation

  1. Combine first 8 ingredients, stirring until smooth.
  2. Heat peanut oil in a large nonstick skillet over medium-high heat. Add minced ginger, minced garlic, and beef; sauté for 2 minutes or until beef is browned. Add green onion pieces; sauté 30 seconds. Add soy sauce mixture; cook 1 minute or until thickened, stirring constantly.

Beef Chop Suey

Chop Suey: A Chinese-style American dish consisting of small pieces of meat, chicken, etc., cooked with a variety of vegetables.

Ingredients – Serves 4

  • 1 pound porterhouse steak, thinly sliced
  • 2 tbsp of vegetable oil
  • 1 onion thinly sliced
  • 2 celery stalks, thinly sliced
  • 1 head of broccoli, cut into small florets
  • 2 cups snow peas, sliced in half lengthwise
  • 1/2 cup canned bamboo shoots, rinsed and julienned
  • 8 water chestnuts, thinly sliced
  • 4 cups thinly sliced button mushrooms
  • 1 tbsp oyster sauce
  • 1 tbs salt

Marinade

  • 1 tbsp chinese rice wine
  • pinch of pepper
  • pinch of salt
  • 1 tbsp soy sauce
  • 1/2 tsp sesame oil

Preparation

  1. Combine all the marinade ingredients in a bowl and marinate the beef for at least 20 minutes
  2. In a preheated wok, heat 1 tbsp of oil and stir-fry the beef until the color has changed. Remove and set set aside. Wipe out the wok with a paper towel
  3. Heat the remaining oil and stir-fry the onion for 1 minute. Add celery and broccoli and cook for 2 minutes. Add snow peas, bamboo shoots, water chestnuts, and mushrooms and cook 1 minute. Add beef, then season with oyster sauce and salt.
